{"id":109,"date":"2010-02-19T11:43:34","date_gmt":"2010-02-19T18:43:34","guid":{"rendered":"http:\/\/theagingofaquarius.com\/dw_blog\/?p=109"},"modified":"2010-05-09T09:37:53","modified_gmt":"2010-05-09T16:37:53","slug":"swedish-meatballs","status":"publish","type":"post","link":"https:\/\/theagingofaquarius.com\/dw_blog\/swedish-meatballs\/","title":{"rendered":"Swedish meatballs"},"content":{"rendered":"<p><span style=\"font-weight: bold\">Pardon my French, but what in H-E-double-hockey-sticks is wrong with recipe writers?<\/span><\/p>\n<p>Yesterday I had a craving for Swedish meatballs.<\/p>\n<p>(I&#8217;ve been watching a lot of Winter Olympics cross-country skiing and while I feel a little sorry for the hapless Norwegians and their maddeningly inferior waxes, those crazy Swedes and their rhythmic, hypnotic, ponderous crab walks have swept me off my feet!)<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/1.bp.blogspot.com\/_AQRnZwa-8ck\/S37LFT1rIQI\/AAAAAAAAASc\/2loyVMb6NL0\/s1600-h\/Swedish-Meatballs_s4x3_med.jpg\" onblur=\"try {parent.deselectBloggerImageGracefully();} catch(e) {}\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/1.bp.blogspot.com\/_AQRnZwa-8ck\/S37LFT1rIQI\/AAAAAAAAASc\/2loyVMb6NL0\/s320\/Swedish-Meatballs_s4x3_med.jpg?w=840\" style=\"margin: 0pt 0pt 10px 10px; float: right; cursor: pointer; width: 160px; height: 120px\" id=\"BLOGGER_PHOTO_ID_5440008691995320578\" border=\"0\" \/><\/a><\/p>\n<p>So, I went to my favorite online recipe source for <a href=\"http:\/\/www.foodnetwork.com\/recipes\/alton-brown\/swedish-meatballs-recipe\/index.html\">Alton Brown&#8217;s Swedish <\/a><a href=\"http:\/\/www.foodnetwork.com\/recipes\/alton-brown\/swedish-meatballs-recipe\/index.html\">meatballs recipe<\/a>. As always, I got sucked in by the relative simplicity of the recipe and the claim of convenience that it would only take me thirty minutes to prepare.<\/p>\n<p><span style=\"font-weight: bold\">Oh, puh-leeze!<\/span><\/p>\n<p>Having undertaken many previous cooking odysseys by the absurd assertions of ease of preparation you&#8217;d think I would know better.<\/p>\n<p>It&#8217;s not Chef Brown&#8217;s fault, of course, that the blade in our food chopper is mangled and I had to finely chop the onion by hand but that, alone, took ten minutes. And even if it hadn&#8217;t, even if I was as fast with a knife as a Benihana cook carving a chicken, you will notice that Master Brown&#8217;s directions say nothing at all about the need to actually CHOP the onion. It simply and blithely says to ADD it to the pan.<\/p>\n<p><strong>Aha! Now I get it!<\/strong><\/p>\n<p><a href=\"https:\/\/i0.wp.com\/3.bp.blogspot.com\/_AQRnZwa-8ck\/S37OAifEr1I\/AAAAAAAAASs\/lBEEi-ylpi8\/s1600-h\/alton%2Bbrown%2Bmixer.jpg\" onblur=\"try {parent.deselectBloggerImageGracefully();} catch(e) {}\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/3.bp.blogspot.com\/_AQRnZwa-8ck\/S37OAifEr1I\/AAAAAAAAASs\/lBEEi-ylpi8\/s320\/alton%2Bbrown%2Bmixer.jpg?w=840\" style=\"margin: 0pt 10px 10px 0pt; float: left; cursor: pointer; width: 131px; height: 175px\" id=\"BLOGGER_PHOTO_ID_5440011908562595666\" border=\"0\" \/><\/a>As a wordsmith it kills me to admit I now have to validate a superfluous and redundant (and repetitious) phrase that turns people like me frigid with contempt: PRE-PLANNING!<\/p>\n<p>In order to prepare food in the length of time promised by the recipe you have to get all your ingredients at the line, in the starting blocks, before you pull the trigger on the clock.<\/p>\n<p><span style=\"font-weight: bold\">The good master directs me to weigh and shape the meatballs by hand&#8230;<\/span><\/p>\n<p>&#8230;no mention of how long <span style=\"font-style: italic\">that<\/span> should take, so let me tell you: fifteen minutes! Maybe you&#8217;re faster than I am. Maybe you&#8217;re less persnickety about perfection of size and uniformity in shape. Good for you. It will still take you ten minutes to shape 30 meatballs by hand.<\/p>\n<p>Then, you can simply <span style=\"font-style: italic\">ADD<\/span> the meatballs to your chopped onions, which are happily &#8220;sweating&#8221; in a pan with clarified butter.<\/p>\n<p><span style=\"font-weight: bold\">Now, there&#8217;s nothing I dislike more than people who gripe about things without offering solutions, so here&#8217;s mine.<\/span><\/p>\n<p>I propose the following example be adopted as the standard guideline for all future publications of recipes:<\/p>\n<p><span style=\"font-style: italic\"><span style=\"font-weight: bold\">Cooking time:<\/span> 25 minutes.<\/span><\/p>\n<p><span style=\"font-weight: bold\">Alton Brown&#8217;s prep time:<\/span> 30 minutes.<\/p>\n<p><span style=\"font-weight: bold\">Your prep time:<\/span> one hour.<\/p>\n<p><span style=\"font-style: italic\"><span style=\"font-weight: bold\">Your prep time if your food chopper is broken:<\/span> one hour, ten minutes.<\/span><br \/>\n<span style=\"font-style: italic\"><br \/>\n<span style=\"font-weight: bold\">Your prep time if your spice cupboard is disorganized:<\/span> one hour,  15 minutes.<\/span><\/p>\n<p><span style=\"font-weight: bold\">Your prep time if you have to go next door to borrow nutmeg and\/or allspice:<\/span> one hour, 30 minutes. (Add 15 minutes for excessively chatty neighbor.)<\/p>\n<p><span style=\"font-weight: bold\"><\/span><span style=\"font-weight: bold\">Your prep time if you don&#8217;t have a fancy, expensive KitchenAid <\/span><span style=\"font-weight: bold; font-size: 78%\">\u00ae<\/span><span style=\"font-weight: bold\">  <\/span><span style=\"font-style: italic\"><span style=\"font-weight: bold\"> stand mixer:<\/span> one hour, 50 minutes.<\/span><\/p>\n<p><span style=\"font-weight: bold\">Your prep time if you have to Google &#8220;clarified butter:&#8221; <\/span><span style=\"font-style: italic\">one hour, 55 minutes.<\/span><\/p>\n<p><span style=\"font-weight: bold\">Your prep time if\u00a0 this particular meal was a spontaneous decision rather than planned and you don&#8217;t typically keep heavy cream in your fridge, so you have to &#8220;run up to the store&#8221; and get some: <\/span>two hours, 30 minutes.<span style=\"font-style: italic\"><span style=\"font-style: italic\"><span style=\"font-weight: bold\"><\/span><\/span><\/span><\/p>\n<p><span style=\"font-weight: bold\">Your prep time if you&#8217;re a big believer in &#8220;cleaning as you go:&#8221; <\/span>three hours.<span style=\"font-style: italic\"><span style=\"font-style: italic\"><\/span><\/span><\/p>\n<p>Speaking of go, I must.
